Southwest grilled string beans

Southwest Grilled String Beans!

In case you haven't noticed by my abundance of bean recipes, it's beans season, and I'm taking advantage!!  One of the issues I'm having, is an obsessive need to figure out how to cook purple beans without losing their gorgeous color.  My husband tried tossing one on the grill, and the color was gone, but the flavor was amazing!!  Smokey, crisp, and still juicy inside!  I immediately knew that Southwest flavors were the way to go!

This one is so simple!  Start out with a pound of string beans, one bell pepper cut in bean sized strips, and 1/2 pint of cherry tomatoes.  In a large bowl, drizzle with about 1/2 Tablespoon of olive oil, 1 teaspoon cumin, 1 teaspoon paprika, and 1 teaspoon chili powder, salt and pepper.  Mix well with tongs or your hands.


Turn the veggies into a grill pan, and hand off to Daddio, the Grill master!  See, wasn't that easy?


Magically, the veggies come back toasty, smokey, and delicious!  (He set them on a high heat charcoal grill, turning every few minutes, until the tomatoes just started to burst)  Unfortunately, my quest for perfectly cooked, but still purple beans was another miss, but I will keep going!


Most importantly, serve alongside the guacamole southwest turkey burgers, in place of calorie dense fries!  Trust me, you won't be disappointed!
