The lighter side of tuna salad

Lightened Up Tuna Salad!

It's lunch time, and it's about a day past needing groceries.  There's no lettuce for a salad, meat or cheese for sandwiches, and no leftovers from last night.  Typically, I would just grab something to snack on, but my hubby is coming home for lunch, and I have to reward that!  I found a can of white meat albacore in water in the pantry, and thought...  lightened up tuna salad!!

This is a super simple recipe!  I drained the can of tuna, and tossed it in a bowl, with a Tablespoon of capers, 1/2 of a chopped cucumber, and 1 small carrot, diced.  


In place of a heavy mayo dressing, I am using a light balsamic dressing!  I used 1 Tablespoon of Dijon mustard, 1 Tablespoon of quality balsamic vinegar, and 1/2 Tablespoon of good quality olive oil.  Mix together, and taste for salt and pepper.  Keep in mind, capers, Dijon, and tuna already have a level of sodium, so taste first!


This was such a great and light lunch!  My husband had it on a roll, and I had a tortilla wrap, and they were both really satisfying!  Great for a packed lunch!
