Veggie packets!!

Veggie Packets!

Okay, so here's the deal...  It has been a long, long day.  Running errands, cleaning the house, and wrestling with the lawnmower in our slightly overgrown backyard.  I am hungry for something light, easy, delicious, and light on dishes.  Feuille paquettes (sorry if that's butchered), are something I have seen several times for cooking fish, with a fat pad of butter, and maybe a lemon, but I don't have fish.  And, I really just want some veggies, and maybe a potato...

So here's how they come together...  Don't blink, it goes super fast!! For the packet, take a piece of extra heavy foil about 18" long.  Fold in half, and fold the two sides over twice, pressing HARD, to make sure there is no leakage.  For tonight's first experiment with packets, I used a handful of  gorgeous multi-colored beans, 6 cherry tomatoes, and 2 small red potatoes cut into 1/4 inch slices. Add one onion slice, and 1 smashed garlic clove, a fat pinch of salt, 1/2 tsp. paprika, and fresh garlic.  Now, comes the test:  splash in 1/2 cup of your favorite stock!  Hope you sealed the packets! 


Seal the packets tightly, make a small hole in the top to vent some steam pressure, and stand upright in a baking dish with high walls.  Pop into the oven at 400*, for about 30 minutes.  


Oh my, look how beautiful those are!  Allow the packets to cool for 15 min. with a large slit in the top of the packages, they will be hot and steamy!  Then, open wide, and pour into a bowl!  The broth is amazingly flavorful, and the veggies should be just tender.  Make sure you poke any unexploded cherry tomatoes before biting into them, they are a trip to the ER, waiting to happen!  

Now for the cleanup...  crumple the foil, and toss it out!  Enjoy!
